Strawberry Shortcake Pop Cake

Who remembers those delicious Strawberry Shortcake ice cream pops? My husband challenged me to make him a giant one for his birthday cake and I can't believe how good it turned out! I even used a spoon to take a "bite" out of the corner for dramatic effect.

Usually, I prefer make my own ice cream, but this behemoth took a full 3 gallons of ice cream to recreate, which would have taken an incredibly long time to make and cost about 10 times as much, so I cheated and used store bought ice cream instead. But I think it still counts as a success! The topping is vanilla cake mix and strawberry cake mix, each combined with butter to make a crumb texture and then coated around the ice cream. Yum!
